Brandy Snaps. fib. Butter. Itlb. Sugar. 4 ltlb. Syrup. lib. Flour. 1°z. Ground Ginger. Cream together the butter and sugar, add the syrup slightly warmed, then the flour and ginger. Put on a clean tin sheet in desert spoonfuls (a good distance apart as they spread in the baking) and bake for a few minutes in a quick oven. When done they must be curled round a ruler, or something similar, whilst hot, and then stored away in air-tight tins.
IFish Cakes.
Fish Cakes. Boil and mash quite smooth 1 pound of potatoes, add to them the remains of any cold fish (freed from bones), a good sized piece of butter and a little pepper, salt, vinegar, and nutmeg. Mix all well together and form into round flat cakes. Brush over with beaten egg (or a mixture of flour and milk), and dip into bread crumbs. Fry them in boiling fat until a nice brown.

Winter Salad. v Endive, mustard and cress, celery, boiled beetrOot and one or two hard boiled eggs. Shred the celery after it has been washed and freed from the decayed pieces. Cleanse the endive, cress, etc., pile these high in a salad bowl, arrange slices of beetroot and egg 0 around alternately, and when ready for the table pour around (not over) the salad, the dressing.

Orange and Banana Salad. Six oranges, six bananas, 2 table-spoonfuls of castor sugar, 2 table-spoonfuls of orange- flower water, and A,pt. of cream. Peel the oranges, remove all the white pith and pips, and cut them into thin slices. Peel and slice the bananas, place them in alternate rows in a glass dish; sprinkle over the castor sugar, and pour on the orange-flower water. Let the dish stand until wanted for use, then whip up the cream, and cover over the fruit.
Lime Water.
Lime Water. Our grandmothers made great use of lime water, and physicians even to-day recommend its use in many ailments. It is such a practical remedy to have about the house. A jug of it should stand in every storeroom or cellar. A lump of quicklime about the size of a pint cup will be sufficient to prepare about two quarts. Put in an earthen dish, pour cold water over it and' stir occasionally for six hours, then carefully turn off the top, straining through two thicknesses of fine cheesecloth and cork tightly in bottles.
