Chocolate Sandwiches. These are very nice and dainty for afternoon tea. Grate some good chocolate finely, and make into a stiff paste with whipped cream. Add a few drops of vanilla, and spread on very thin white or brown bread and butter, and cut into fancy shapes.
Savoury Eggs. Boil some eggs for 10 minutes, put them into cold water to enable them to peel easily, roll each egg in finely minced meat. Brush over with egg, roll them in bread-crumbs, and fry in hot fat until sufficiently cooked, then cut them each into half.
Stain for a Floor. A simple stain can be made with liuseed- oil and ground burnt amber well mixed together. Apply to the boards with a brash or pttd.
How to Stew Meat. Stewing has been described as the most economical iiiethod of cooking ever invented. C, No great heat is required, and practically no attention is needed, and by this process we are enabled to make use of pieces of meat which, while very nutritious when carefully dressed, would otherwise be too tough for food. The meat is put in the stewpan with very little-cold water —not enough to cover it —and then gradually heated. Remember stews must never boil. When the meat is half done vegetables may be put in.
Useful Hints. To clean an enamelled bath, rub with salt moistened with vinegar. The peel of oranges and lemons make a delicious flavouring for puddings, sauces, etc. To keep it, dry well, grate, and keep in an air-tight canister. Egg-stains are easily removed from spoons, etc., if rubbed with a little dry salt. Fine coal moistened with a little paraffin is excellent for cleaning steel. 0 Milk puddings may be considerably enriched by adding a little shredded suet.
