An infusion of cerealine, or an infusion of ordinary bran, will give a quantity of soluble ferment, which will rapidly attack the starch-cells, and, in the presence of water, hydrate the starch into maltose and dextrine, giving a lare quantity of dextrine. This is another reason why I consider that no system of milling is per- fect, whether it be done by rollers or disintegrators, if it does not fulfil these two conditions, the removal of the germ, and the removal of the bran."
